Let’s meet your new favourite sweet treat for the summer – Silken Tofu Pudding! 

Have you ever tried using silken tofu in a dessert? It might sound unexpected, but trust me – it works! Silken tofu has a subtle, neutral taste and creates a velvety, smooth consistency in place of heavy cream. Additionally, it offers numerous nutritional benefits. Let’s explore why tofu is great for you! 

What is tofu?

Tofu is produced by using either fresh or dried soybeans. The soybeans are first soaked, then boiled and strained to extract a soy-based liquid. To set the liquid, typically calcium or magnesium is added. This is much like the curdling process used in making cottage cheese from dairy milk. The resulting curds are then compacted into solid white blocks. The texture or firmness of the tofu is determined by the amount of moisture removed during this pressing process.

      There are different varieties of fresh tofu, such as soft or silken, firm or extra firm. For this recipe, we are using silken tofu. This type of tofu has the most moisture and lends a smooth, custard-like texture ideal for puddings and creamy desserts. 

      What are the Benefits of Tofu?

      • Complete protein: this means it contains all nine essential amino acids your body needs but can’t produce on its own
      • Supports muscle repair and growth: valuable for vegetarians or anyone looking to add more plant-based protein to their meals

      Is Uncooked Silken Tofu Safe to Eat?

      Yes! Silken tofu is safe to eat straight from the package as long as it’s properly stored and consumed shortly after blending. In this pudding, it’s refrigerated before serving, which keeps it fresh and delicious.

      Easy Tofu Pudding

      Yields: 3-4 servings
      Total time: 15 minutes
      Difficulty: 1/3 – easy

      Ingredients

      • 2/3 cup white chocolate (120g)
      • 1 1/2 cups silken (soft) tofu (350g)
      • Juice of ½ a lemon 
      • 1 tbsp and 1 tsp honey or maple syrup (20g)
      • Pinch of salt 
      • Fresh or frozen berries 

      Steps

      1. Melt the white chocolate gently in a heatproof bowl, either in the microwave or over simmering water.
      2. Combine the melted chocolate, silken tofu, lemon juice, honey or maple syrup, and a pinch of salt in a blender. Blend until silky smooth.
      3. Pour the pudding into serving bowls and top with your favourite fresh berries.
      4. Add a sprinkle of lemon zest on top for an extra burst of flavour and a pretty finish.
      5. Chill in the refrigerator for at least 2–3 hours before serving.

      Make it Work for You: Dietary Customizations

      • Vegan friendly: swap honey for maple syrup and use dairy-free white chocolate 
      • High protein boost: add 1 scoop of unflavoured or vanilla protein powder 
      • Low sugar version: use a sugar-free white chocolate or reduce the amount of sweetener and let the berries help with that
