Quick to prepare and packed with fresh ingredients, this salad offers a delightful blend of textures and tastes. Watermelon:

Watermelon is a summertime favourite for a good reason – it is incredibly hydrating and low in calories, thanks to its impressive 90% water content. This juicy fruit gets its vibrant colour from lycopene, an antioxidant that helps combat oxidative stress and inflammation. Additionally, watermelon is a rich source of vitamins A and C which are both important for skin health and immune function. 

Cucumbers:

Cucumbers add a crisp, refreshing element to your salad while enhancing your hydration needs with their 95% water content. They also support essential bodily functions such as temperature regulation and transporting waste products and nutrients. In addition, cucumbers are low in calories and like watermelon, are packed with antioxidants that contribute to overall health and wellness. 

Feta:

Feta cheese brings a delightful creamy texture to the salad. Beyond taste, feta adds a source of calcium and phosphorus. Calcium is crucial for maintaining strong, healthy bones and teeth, while phosphorus works with calcium to support bone health.

Refreshing Watermelon Summer Salad

Yield: 4 servings
Time: 15 minutes 

This salad is perfect when you want something light yet satisfying. The blend of sweet watermelon, crisp cucumber and feta is a great celebration of seasonal flavours. 

  • For the Salad
    • 1 – Watermelon, cut into bite-size pieces 
    • 2 – English Cucumbers, chopped
    • ½ cup – Feta cheese, crumbled 
    • Sprinkle of Salt
  • For the dressing
    • 2 tbsp – Balsamic glaze
    • 1 tbsp – balsamic vinegar
    • Garnish with basil and mint
  1. Prepare the watermelon by cutting it into bite-sized cubes
  2. Slice the cucumbers
  3. Portion ½ cup of feta cheese
  4. In a large mixing bowl, combine the watermelon cubes, cucumber slices and crumbled feta cheese. Add a sprinkle of salt to taste 
  5. Drizzle the balsamic glaze and balsamic vinegar over the salad
  6. Garnish the salad with freshly chopped basil and mint
