Easy to Make Ahead
With minimal preparation, baked oats are great to make ahead of time to have on hand. Preparing breakfast ahead of time can be a game changer if you often find yourself rushing to get out the door. Having a balanced breakfast with both protein and fibre can lead to stable energy throughout the day and prevent energy crashes later on. Meal prep can also help you save time and money, and eat healthier throughout the week! Simply double this recipe if you want to make enough portions to last up to four days.
Benefits of Oats
Oats make a great base for breakfast, as they are nutrient dense and heart healthy. Oats contain a fibre called beta-glucan, which is helpful in slowing digestion, improving satiety, and reducing LDL cholesterol. Because oats are quite plain, you can make different variations of baked oatmeal by adding different fruits or flavours to keep it interesting. Try customizing this recipe by topping with greek yogurt, fresh fruit, peanut butter or hemp hearts!
Chocolate Banana Baked Oats
Serves: 2
Prep time: 5 minutes
Cook Time: 25 mins
Difficulty: 1/3 – Easy
Ingredients
- ½ cup rolled oats
- ¼ tsp baking powder
- 1 tbsp cocoa powder
- 1 tsp cinnamon
- 1 tbsp protein powder or skim milk powder
- ½ cup milk
- 1 banana, mashed
- 2 tbsp maple syrup
Steps
- Preheat oven to 350F
- In a bowl, combine the oats, baking powder, cocoa powder, protein powder and cinnamon. Add the milk, banana, and maple syrup and mix well.
- Evenly divide the mixture into two ramekins and bake 25 minutes
- Add optional toppings such as fresh fruit, greek yogurt, or peanut butter and enjoy!
If you don’t have any ramekins, you can use a muffin tin (I would recommend with muffin papers) and bake for about 5 minutes less.
