Keara’s Dish – Asparagus and Mushroom Egg Bites

These egg bites are a game changer. By incorporating fresh asparagus, a springtime favourite, you are not only adding a vibrant green colour to your dish but also boosting its nutritional value. Asparagus is rich in vitamins and minerals including vitamin K for bone health and folate for healthy cell growth.

In this recipe, we are featuring mushrooms. Mushrooms are nutritionally dense, providing you with B vitamins which are important for cell health and maintaining energy levels. When combined with eggs, this dish delivers a satisfying protein boost to keep you energized throughout the morning. 

The best part? These egg bites are versatile and convenient. Customize them with your favourite veggies and cheese. They are perfect for meal prep too. Simply store them in the fridge for up to 4-5 days. Enjoy them cold, warm or at room temperature, whenever you need a quick and nutritious meal. 

    Asparagus and Mushroom Egg Bites

    Preparation time: 15-20 minutes
    Serves: 8 egg bites

    •  1 ½ tbsp – Olive oil
    • 1 ½ cups – Asparagus, chopped
    • 1 cup – Mushrooms, sliced
    • 2 – Green onions, chopped
    • 1-2 garlic cloves, minced
    • 6 eggs
    • 6 tbsp – Milk
    • ½ cup – Feta cheese  
    • Salt and pepper

    Say goodbye to your regular egg routine and hello to a fresh new way to start your day with these yummy egg bites! 

    1. Preheat your oven to 350 F
    2. Line your muffin tin with paper baking cups so the eggs don’t stick to the tin
    3. In a skillet, warm up olive oil over medium-high heat. Toss in the asparagus, mushrooms, and green onions. Sauté them for about 5-7 minutes until they are tender. Add the garlic and season with salt and pepper to taste
    4. Combine eggs and milk into a bowl and whisk. Pour the mixture into a liquid measuring cup with a spout so it will be easier to pour into the muffin tins
    5. Add the vegetables and feta to the bottom of the muffin tins. Pour the egg mixture over top and give it a gentle stir to combine the flavours
    6. Place your creation into the oven and let it bake for about 20-25 minutes or until the eggs are set and cooked through

    If you do not have enough of the egg mixture to fill all the spots in your muffin tin, fill the extra ones with water before placing them in the oven. This will help create even baking for your egg bites.
